This past summer I had the wonderful opportunity to intern for Camp Ronald McDonald in Northern California at Eagle Lake as a food service/nutrition intern. My duties included directing and supervising food service for 150 to 200 children who had a variety of special medical needs, economic and emotional needs, and developmental or physical disabilities each week. Other responsibilities of the internship were: developing order lists, purchasing food, coordinating special dietary needs with the camp nurse and registered dietician, meal planning, and conducting plate waste studies. Not only did I get to work hands on in the kitchen and apply what I had learned in several nutrition classes. I also was able to experience what it was like to touch the lives of children through their meals and the nutrition classes that I taught. When looking back on this summer and my experience I like to call it a life altering experience that I'll never forget.
